Description
Les Preuses is probably taken from the word “Perreuse” (stone), the name given to the ancient Roman road which ran below the current vineyard. Made for ageing thanks to a dense, compact, clay-rich soil resting on a limestone bed.
Domaine William Fevre Chablis Grand Cru Les Preuses 2018 vintage has a floral nose, with fruity aromas enhanced by intense mineral notes and developing lightly smoky touches. Very round on the palate, both full-bodied and refined. Pair this chablis with fish, shellfish and other seafood, grilled or in a cream sauce. Poultry and white meat, grilled or in a cream sauce.
This comes from two parcels, facing east and south-west, respectively, making a very tidy 2.5ha in total. Showing the delicate touch of one of the very best winemakers in Chablis, this is a saline, focused, wonderfully structured Preuses that has plenty of grip and acidity, sappy, bone-dry flavors and remarkable length. Funky reduction still dominates this wine’s nose with yeasty fumes, but underneath bright lemon notes shine through. The palate comes in with compact concentration and bundled but buffered energy. Drive and verve are packed in 2018’s generosity, with a slender, bright core that conveys mouthwatering refreshment. The chalky finish is long and fresh. (AK)
