Les Preuses is probably taken from the word “Perreuse” (stone), the name given to the ancient Roman road which ran below the current vineyard. Made for ageing thanks to a dense, compact, clay-rich soil resting on a limestone bed. Domaine William Fevre Chablis Grand Cru Les Preuses 2018 vintage has a floral nose, with fruity aromas enhanced by intense mineral notes and developing lightly smoky touches. Very round on the palate, both full-bodied and refined. Pair this chablis with fish, shellfish and other seafood, grilled or in a cream sauce. Poultry and white meat, grilled or in a cream sauce. Outer quote mark This comes from two parcels, facing east and south-west, respectively, making a very tidy 2.5ha in total. Showing the delicate touch of one of the very best winemakers in Chablis, this is a saline, focused, wonderfully structured Preuses that has plenty of grip and acidity, sappy, bone-dry flavors and remarkable length.
