Francois Boudin’s from La Chantemerle Chablis is a traditionalist, you won’t find a skerrick of oak here, instead he favours concrete fermentation and maturation, all in the pursuit of purity. for the 2021 vintage, it is shaping up as another great year in Chablis. While it was another warm vintage along the lines of 2018 and 2019, it seems to have delivered wines with clearer vineyard imprints, higher acidities and lower alcohol, with less of the tropical tinged fruit we have seen over the last couple of years.
